Everyone wonders what to do with all those leftovers in the frig … you don’t want to just keep reheating the same thing over & you don’t want to throw away all that food ……. take all those leftovers and make Refrigerator Pie!!! (With this recipe, it will never be the same way twice.)
Here are the basic ingredients that you’ll use each time: 1 package refrigerated pie crusts (2 crusts) … I have 3 kids & don’t have the time to make the crusts homemade! Get the store brand crusts, just as good as name brands and you’ll save money!!! …. 3 eggs (divided) … 1/3 cup milk … 1 onion (diced) … shredded cheese (any kind)
The rest of the ingredients: Every leftover you have in the refrigerator! I mean everything … once I combined chicken (cut up any meats into bit size pieces), mac & cheese, mashed potatoes, broccoli, corn, steak, noodles & gravy. Don’t worry about the different sauces on any of the foods … once everything is combined & you toss in your basic ingredients, it all works out good!
Putting it together: Preheat oven to 375. Spray deep pie dish w/cooking spray. Put one pie crust on bottom of a deep pie dish (I usually roll pie crusts to out to stretch it a bit). Separate 1 egg & set egg white aside. Whisk yolk & remaining 2 eggs & milk. Then add in all your leftovers and toss around in egg mixture to coat. Add some shredded cheese (however much you like - my family likes a lot). Put mixture in pie dish and fold pie shell edges over mixture. Brush the egg white over the border of crust, then put other pie crust on top (egg white acts as a “glue”). Remaining egg white brush over top of pie crust … this will make it look nice & glossy!!
Bake: 35-45 min. or until golden brown … cool about 5-10 min.
I usually will put leftovers in a freezer bag all diced & combined (ready to put in a pie shell), then freeze bag of leftovers … so when your in a pinch or just want something different - ready to go w/Refrigerator Pie! Right now in my freezer is a bag filled w/leftovers from chicken stew, dumplings, mashed potatoes, gravy, alfredo noodles, mixed vegs and london broil. All I have to do is defrost & put in the pie shells & I actually saved money by not wasting any leftovers!!

This is a great idea. I have been searching for a solution to use up those leftovers that don’t seem to get eaten by my family. I can use this idea and my family will never know it was whipped together from the refrigerator leftovers. Thanks a bunch for the idea and the instructions.
