My kids LOVE this dinner … so do I, it doesn’t involve the oven!!!

Ingredients ….. 1 lb. ground beef, 1 taco seasoning packet, 1/4 tsp. salt, 1 can enchilada sauce (10 oz.), 3/4 c. water, 1/2 c. medium thick & chunky salsa, 12 soft tortillas (6″ or larger, any kind), 1c. shredded Mexican blend cheese.

- brown up ground meat & add taco seasoning to meat … once browned add enchilada sauce, water & salsa to skillet .. simmer & remove from heat.

- cut the tortillas in about 1″ strips (use a pizza cutter, faster & easier)

- arrange half of tortillas evenly over bottom of a deep casserole dish (I usually spray the bottom before putting tortillas down), put half of meat mixture on tortillas, then half of the cheese …. top w/remaining tortillas, then remaining beef mixture, then remaining cheese.

- put casserole in microwave for about 3-5 minutes on high … or until the cheese is melted.  Then serve!!!!

Super easy & fast and an affordable dinner!!!
