Sharing with Mom’s on the web
This recipe I just got from M.J. … I work part-time at a salon and M.J. is famous for making homemade pies, quiches & breads and bringing them in to share us and the clients. (that’s a true friend that will share all her hard work!) When I say homemade, I mean homemade — she will boil a pumpkin to make a pumpkin pie. I on the other hand will open a can of pumpkin mix.
Here’s M.J.’s recipe for a “veggie” quiche … I’m saying veggie, because you can get really creative with what you use and with whatever is in season!! Now M.J. used zucchini … it was AWESOME!!! M.J. shared she used carrots and it turned out just as good!
Ingredients: 3-4 small zucchini (peeled every other strip, you want to leave some green skin on for color in quiche and sliced paper thin) … 2 cups Bisquick … 1/2 cup Parmesan cheese … 3/4 cup onion (diced really fine) … 1/2 cup oil … 4 eggs (beaten well).
Directions: Oven to 375 … spray dish really well … mix oil, eggs, cheese & onion …. add in zuccuhni, mix … then add Bisquick, mix … you’ll bake this 45 min. or until golden brown.
Now you have a great quiche recipe to use up those veggie’s and a creative way to get the kids to eat their veggie’s!!!
