Sharing with Mom’s on the web
This is one of the many ways I’ll stretch and re-invent those Thanksgiving leftovers! (You can only eat so much turkey soup in a week.)
Bruschetta Turkey Bake:
Basic ingredients: 1 can diced tomatoes (14.5 oz. can, undrained) … Stuffing mix (6 oz., but I use a little more - my family loves stuffing!) … 1/2 cup water … 2 cloves garlic (minced) … 1 lb. Turkey (cut into bit size pieces) … 1 cup shredded Mozzarella cheese (I use a little more than a cup - family loves cheese too!)
Directions: oven to 400 … mix tomatoes, stuffing, water and garlic (just until stuffing is moistened) … in a 13×9 dish, layer turkey, cheese and stuffing mix … Bake for 30 minutes (or until warmed through).
Bonus: I use chicken in place of turkey throughout the year. The kids LOVE this recipe!! (whether it’s with chicken or turkey!) This is also a good potluck dish or if you’re making a meal for a family in need of a prepared dinner (freezes nice too).
